Brian Mellor, Award Winning Master Chef of Great Britain and holds Master Craftsman with The Craft Guild of Chefs. The former Granada TV Exec Chef has been involved in almost everything to do with food; never limiting himself to one area he has carefully engineered his career to experience different aspects of the business. Fine dining to gastro pubs and brasseries, private and corporate hospitality, media, festivals and international events all sit comfortably within his portfolio.

In addition to his own farm based cookery school Brian operates as a 'whites on hands on' consultant with a variety of clients to develop their food businesses and enthuse their teams. Bespoke workshops such as "Prep to Dem" are designed to enhance their careers building their overall skills and confidence wheather in the workplace, performing live or participating in competitions. He also encourages accomplished Chefs to become effective mentors for the young generation of Chefs with the "Senior Mentorship Course" held in association with the British Food Trust.

He has held a variety of Head Chef, Executive Chef and Group Executive Chef roles, responsible for multi site operations and staff thereby developing his communication and managerial techniques in addition to his cooking skills. He continues to work on behalf of international equipment and food producers, Food Festivals, Primary CareTrusts, Hospitality Skills Theatres, Equine and Agricultural Shows to help them deliver their message, entertain and act as a host for fellow Chefs.

'Have you ever tried to do that thing - you know the one where you rub your tummy and pat your head at the same time? Its a bit like cooking and speaking together....then you have to make it interesting, informative and even entertaining!' Brian Mellor.

With the surging interest in food and cooking the role of the chef has changed bringing with it new opportunities and an exciting yet daunting expectation from chefs - that of a live performance. 

Could you explain some of your daily tasks to an audience of a hundred people? Can you carry out  several intricate manoeuvres perfectly while keeping that audience engaged and entertained? Would they leave confident that you were a competent professional and they cant  wait to buy your food or product, visit your restaurant or see you at another event following a great experience?

These are the expectations being placed on you, chefs to deliver at the increasing number of markets, events, launches, festivals, media and in house events. The foundation for any chefs is your preparation work or "prep" before any service of food.

This training will help you to transfer those skills into a public, professional or media arena drawing on Brian's real experiences of the "dem" circuit. You'll learn how to overcome possible barriers, develop new skills and enhance your CV and job prospects

  • Numbers -   6 - 10 people at max, so dont delay in booking

Master Chef Brian Mellor will issue a Certificate of attendance along with observations/assesment report for Anne Stewart Ltd's professional use. In turn Anne Stewart Ltd will issue Approved Demonstration Chef Certificates for each person attending the course based on the individual reports for Corporate Level 1, 2 or 3 Cooking Demonstrations.
